Homemade Manicotti

This is the first thing my mother taught me how to make, I was eight years old and it was all I wanted to eat. It is still my favorite to eat and make.  The paper thin pasta makes them so light, perfectly elegant for weddings. 

The  pasta is filled with ricotta, mozzarella, romano cheeses and fresh herbs. Then covered lightly with a fresh rosemary marinara and baked. So good.

These perfect little pears are braised and then slow cooked in a spiced amaretto sauce. Served with Volto Creamery Miranda cheese ( think Taleggio) they pair together perfect.

Slow cooked local pork spare ribs..

Slow cooked local pork spare ribs, local cider, organic raisins, heirloom tomatoes, roasted garlic, thyme, basil and Mirin. 

One of the joys of slow cooking is that you can use practically anything you have on hand, six to eight hours of cooking it all comes out amazing. I used Mirin wine (one of my favorites) and started with organic onions, carrots, shallots,three kinds of raisins, apples, cider, maple syrup, tomatoes ( heirloom from the farm-good to freeze things) thyme, roasted garlic, fresh garlic and just kept adding things over the hours. At the end I add red pepper flakes for heat ( the longer you cook the pepper the hotter it gets) so I put mine in about 5 minutes before it is done. 

Please note I use only organic ingredients, it matters.  Writing organic in front of everything is annoying.

Slow cooked local beef shoulder roast, tree juice maple syrup, organic roasted shallots, organic roasted garlic, pink peppercorns and some fresh thyme. Yum!

Our local farmers had some beef shoulder roast ( love it) so I decided to make it for a wedding tasting. I honestly don't know why people always go for the "prime cuts" this is amazing.  A very important part of farm to table is being able to cook all cuts, it's a learning curve at first but well worth the time invested.

I absolutely love making this for weddings.

I use lychee wine so often it pairs well with roasted quail, lamb, chicken and even tofu. You can take an dish like chicken Marsala and use the lychee wine instead, throw in some in season organic blueberries and roasted shallots. Don't forget the black pepper.

You just feel better when you make good food choices.  Organic greens from Good Cheap Food in Delhi N.Y.  Broth is a simple onion, celery, carrot, cumin and fresh thyme combination and fresh spinach added to the bowl, then spoon out hot broth over it. Yum!
