Slow cooked local beef shoulder roast, tree juice maple syrup, organic roasted shallots, organic roasted garlic, pink peppercorns and some fresh thyme. Yum!
Our local farmers had some beef shoulder roast ( love it) so I decided to make it for a wedding tasting. I honestly don't know why people always go for the "prime cuts" this is amazing. A very important part of farm to table is being able to cook all cuts, it's a learning curve at first but well worth the time invested.
